Honey and Chilli Grilled Chicken

As today marks the First of Ramadhan, I have decided to start serving healthier meals for the family. This recipe is certainly refreshing and very filling, in fact! Will definitely cook this again and add other ingredients to it for a more bursting flavour. :)



Ingredients (serves 5)
6 chicken breasts
5 cloves of garlic, half inch ginger:  blended to form paste
As many cherry tomatoes you like
Lettuce (tear to bite-sized pieces)
2 tbsp chilli powder (more if you like it spicy)
2 tbsp honey
2 tbsp oyster sauce
1 tbsp Maggi seasoning
1 tbsp sweet sauce
1 tbsp freshly ground black pepper
1 large lemon (zest and juice)
Extra virgin olive oil
Salt and pepper

  1. Clean chicken breasts (you may use other parts. I prefer chicken breasts for a healthier meal)
  2. Lather chicken pieces with garlic and ginger paste and a little bit of salt.
  3. Put chicken pieces in a pot and cover with water.
  4. Add a dash of salt and pepper.
  5. Heat pot with chicken and water for 5 minutes and then remove chicken pieces from pot.
  6. Continue to boil the water. (To make stock for mashed patato and black pepper sauce)
  7. Cool chicken for 5 minutes and place on large baking dish.
  8. Lather (generously) chicken pieces with oyster sauce, chilli powder, Maggi seasoning, honey and sweet sauce.
  9. Sprinkle freshly ground black pepper and lemon zest on chicken.
  10. Finally, pour lemon juice over the chicken breasts.
  11. Cover with cling wrap for 30-60 minutes.
  12. Heat grill pan and drizzle extra virgin olive oil on it.
  13. Once heated, grill chicken breasts with squeezed lemon and cherry tomatoes.
  14. Serve on a lettuce platter and pour remaining marinade over cooked chicken.
